Tater Tot Hot Dish for 2

Trying to tweak a tater tot hotdish recipe for two people.

Instructions

Step 1
Preheat oven to 180°C /375°F.
Step 2
Lightly grease an 8 or 9-inch baking dish with cooking spray. Set aside.
Step 3
Chop the onion, and slice the mushrooms.
Step 4
Brown the ground beef in a large skillet over medium-high heat. Drain excess fat.
Step 5
Add the onions to the skillet and sauté for 4 to 5 minutes until translucent.
Step 6
Add the garlic and cook, stirring frequently, for an additional minute.
Step 7
Stir in Henderson's Relish or Worcestershire sauce and season with salt and pepper to taste.
Step 8
Transfer ground beef mixture to the prepared baking dish and spread evenly.
Step 9
Top with cream of mushroom soup, followed by the mixed vegetables, then the cheddar cheese. Make sure to season the mixed vegetable layer.
Step 10
Finally, top with tater tots.
Step 11
Bake for 35 to 40 minutes or until tater tots are golden brown and cheese is melted.
Step 12
Serve immediately.
