Step 1
Melt the butter over medium heat. Sautee the pears for 5 minutes, until soft. Boil the tortellini according to the instructions on the package. Add the garlic and sautee for 1-2 minutes more

Add the flour and cook for 3-5 minutes. Stir near-continuously. Let it darken to a darker gold.

Add the cream + milk and stir. raise heat slightly to medium high until it boils, then turn it back to medium.
Step 4
Add all the goat cheese, and heat it until mixed.
Step 5
Toast the walnuts on medium heat for 5 minutes, stir them every minute. add them to the sauce, along with the boiled tortellini. Enjoy!
