Instructions

Step 1
1. Place all the dry seasoning into a baking tray. Then with a knife make holes i the leg of lamb. Roll a spring of thyme around a cinnamon stick and insert deep into each hole. Then roll over the leg of lamb on the seasoning making sure the whole leg is covered.

2. Place a baking tray on a high heat and add a touch of olive oil. Roughly chop the onions and carrots, and remove a few sticks of celery then add it to the baking tray. Then add a touch of honey on top of the vegetables. Mix it for a few minutes until soft.
Step 3
3. Add the leg of lamb in the tray, make sure the lamb touches the bottom of the tray, and sear the lamb. Then add a touch of olive oil and salt.
Step 4
Pre-heat your oven at 160Cº then place the lamb in for 60 minutes.

While the Lamb is the oven prepare the mustard and lime vinagrete. Add a table spoon of mustard into a bowl, then a touch of olive oil and lime zest and juice. Mix it well until combined
