Ingredients

3 cupsJasmine Rice
prepared

2 lbsflank steak
or skirt steak, sliced very thin

1.5 Tablespoonskosher salt

2 Tbspcanola oil
or vegetable

1 ½ cupscarrots
shredded

12 ozsfrozen broccoli florets

For the sauce

2 teaspoonsminced garlic

1 Tfresh ginger
grated : keeping it frozen makes is much easier to grate with no need to peel

½ tcayenne

½ cupsoy sauce

½ cbrown sugar

2 Tbspsesame oil

2 TSPFive Spice
or 1/2t anise

½ tfish sauce

2 tspmsg

1 teaspoonbaking soda

1 cbeef broth
For slurry:
Instructions
Slice
Step 1
Slice steak as thinly as possible, cutting out any excess fat. (I find that slicing while still partially frozen works very well.) Salt liberally and set aside momentarily while preparing the sauce.


Sauce
Step 2
Combine all listed sauce ingredients in medium bowl. Set aside.










Brown
Step 3
Add canola oil to inner pot and select the sautee setting. Once oil is heated, add beef in a single layer in the bottom of the pot. Cook in batches until browned.



Deglaze
Step 4
Deglaze pot by adding 1/4 cup water and, using wooden spoon, scrape all of the stuck brown bits from the bottom of the pot.

Pressure Cook
Step 5
In inner pot, combine meat, sauce and carrots. Attach lid and set valve to sealing. Use high pressure setting for 10 minutes, followed by a 10 minute natural release.

Slurry
Step 6
Combine cornstarch and water. Add to inner pot and stir until it begins to thicken.




Serve
Step 7
Add broccoli and serve over rice.
