Bring to a boil the water, lemon juice and sugar

Let it cool

Preheat oven at 175°C

Start by separating the egg whites from the egg yolks

Mix together the egg yolks with the sugar

Add the dry ingredients (simigdali, flour, baking powder, salt) and the milk

Whisk the egg whites until they form peaks then, delicately, add them into the mixture

Pour the dough in a 30cm mold
Step 9
Bake at 175°C for 30 to 35min
Step 10
Pour the syrup on top of the hot ravani
Step 11
Let it sit for 35min before serving
