Instructions

Syrup

Step 1
1. To a large pot, add all the syrup ingredients.
Step 2
2. Boil for 5 mins and set aside.

Balls

Step 3
1. In a mixing bowl, add ghee to milk powder and mix till well incorporated.

2. Add water, baking soda and egg. Mix gently.
Step 5
3. Add plain flour and mix gently. The dough will be sticky.

4. Put in the freezer for 5 minutes. This will make the dough much easier to handle.

5. Dust hands with some plain flour and roll dough in a log.

6. Cut off small portions for the jamans. Roll small portions into balls.
Step 9
7. Add balls to a plate that has plain flour sprinkled on it. This prevents sticking.

8. Put the pot of syrup on a very low flame to keep it at a warm temp. Do not boil.

9. In a wok, add clean oil and heat till hot. Before adding the balls, turn off the heat. This prevents the balls from overcooking from the outside and being uncooked in the middle.

10. When the jamans start floating to the top, turn the heat back on to medium low flame. Gently move the jamans around with the back of your spoon so that there is an even colour all around. The colour should be a darker brown.
Step 13
11. Add cooked gulab jamans into the syrup and toss gently to coat evenly. Let the jamans sit for at least an hour.
