Instructions
Step 1
Shred the chicken apart until you have two cups of chicken in large chunks. Dice the avocados and mix with 1 Tbsp lime juice and a pinch of salt.
Step 2
Thinly slice the green onion and chop the cilantro.
Step 3
Mix the mayonnaise and 1 Tbsp lime juice to make the dressing.
Step 4
Put the chicken in a large bowl and add the green onions and dressing. Toss until coated. Add the avocado and any remaining lime juice to the chicken.
Step 5
Top with cilantro and gently mix. Serve right away or chill before serving.
