Step 1
In large pot, heat butter and oil. Saute onions, carrots and celery on medium low for 10 minutes. Season vegetables with salt and pepper. Pour in chicken broth and cubed raw chicken. Raise heat to medium high to poach chicken in liquid. Once chicken has cooked pour in rice and packet that came with rice. Cover and reduce heat simmer lightly for 20 minutes, stirring occasionally.
Step 2
In small bowl whisk cold half-and-half with flour until smooth. Pour into pot and reduce heat to low. Cook for 10 minutes or until rice is softens and soup has thickened. Taste and season accordingly.
