For the rub
3 tablespoonspaprika
1 ½ tablespoonssalt
1 ½ tablespoonssugar
2 teaspoonsdry mustard
1 tablespooncumin
1 teaspoonblack pepper
1 tablespoongarlic powder
½ tablespoononion powder
1 teaspooncayenne
For the barbecue sauce
½ cupketchup
½ cupseasoned rice vinegar
1 tablespooncider vinegar
¼ cupapple juice
or cider
3 tablespoonshoney
2 tablespoonssoy sauce
1 teaspoonworcestershire sauce
2 teaspoonswhole grain mustard
1clove garlic

For the coleslaw topping
6 cupsfresh cabbage
finely shredded
1 teaspoonsalt
¼ teaspoonfreshly ground black pepper
2 tablespoonscider vinegar
3 tablespoonscanola oil
2 tablespoonsmayonnaise
1garlic clove

For the sandwiches
Instructions
Step 1
Preheat the oven to 225ºF.
Pork
Step 2
Mix all of the ingredients for the rub together in a small bowl. Trim any large pieces of exterior fat from the pork if desired. Pat the rub mixture on all sides of the pork and place uncovered, in a dutch oven. Roast uncovered for 1 hour.
Step 3
Remove from the oven, brush with the olive oil, add the water, cover and return to the oven for about 5 more hours, until the pork is tender and pulls apart easily with a fork. Roasting time is about 90 to 100 minutes per pound.
Step 4
Transfer the pork to a large platter and allow to cool enough to handle. With two dinner forks, shred the meat into bite-sized pieces removing any large chunks of fat in the process.
Coleslaw topping
Step 5
Combine all the ingredients in a large bowl. Allow to sit at room temperature for about 10 minutes. Taste and adjust the seasoning if necessary. Cover and refrigerate until needed.
Barbecue sauce
Step 6
Combine all the ingredients in a small saucepan and heat to a simmer over medium heat. Cook for about 15 to 20 minutes until thickened.
Step 7
Add the barbecue sauce to the shredded pork.
