Step 1
Preheat oven to 200C.

Step 2
Place your aubergines on a baking tray, lined with parchment. Using a fork make a few holes on each and bake them for 1 hour.
Step 3
Make crosscut on tomatoes, place them in a large bowl and pour in boiling water. Leave for to minutes, then drain and peel the skin.
Step 4
When aubergines are ready, peel the skin, squeeze them in your hands to discard extra liquid and chop. Transfer to a large bowl.
Step 5
Finely chop the onion and garlic(as finely as you can)
Step 6
Finely chop tomatoes, discard the extra liquid.
Step 7
Onion, garlic and tomatoes add to the aubergines. Add salt, pepper and olive oil and mix well together.
Step 8
Chill before serving.
