Dough
¼ cupunsalted butter
¼ cupwhite sugar
1 cupmilk
2 ¼ tspactive dry yeast
2eggs
2 tspvanilla extract
½ tspkosher salt
3 cupsflour
¼ cupflour

Instructions
Make Dough
Step 1
Heat a large heavy pot over medium heat. Add ¼ cup butter and stir with a wooden spoon until melted.
Step 2
Remove from the heat. Add the milk and ¼ cup white sugar. Stir well. Add the dry yeast and let it sit for 5 to 10 minutes until the yeast is frothy.
Step 3
Stir in the eggs, kosher salt, and vanilla extract.
Step 4
Add 3 cups flour and mix it with a wooden spoon for about 1 minute until smooth. The dough should be sticky.cinnamon roll-dough

Cover and let the dough rise for 1 hour at room temperature until it doubles in size.cinnamon roll

Deflate the dough by hand and knead it until smooth and soft.
Step 7
Cover and let it rise another 30 minutes.
Make dried filling
Step 8
Combine ¼ cup brown sugar, cinnamon powder, cleaned walnuts, raisins, and a pinch of salt in a bowl. Mix well.
Make Syrup
Step 9
Combine ⅓ cup brown sugar, ⅓ cup water, and 3 tablespoons rice syrup in a pan. Cook for about 3 minutes over medium heat until the bubbles come up vigorously.
Step 10
Reduce the heat to low and simmer another 3 minutes until it turns a little sticky and shiny. Let cool.
Shaping & Baking

Deflate the dough and knead it until it’s nice and smooth. Use the remaining ¼ cup flour to dust your dough, cutting board, and your hand.
Step 12
Transfer the dough to the dusted board. Dust your hands with a little bit of flour and spread the dough into a flat rectangle about 13 x 8 inches.

Brush the ¼ cup melted butter all over the dough. Evenly spread the dried filling over top.cinnamon roll-butter

Grab the bottom edge of the dough and gently roll it up, to make a log.cinnamon roll

Cut the roll into 9 equal sized pieces.cinnamon roll

Put the syrup into your baking pan. Swirl it around so it evenly coats the bottom of the pan. I used my 8 x 8 inch square non-stick baking pan.cinnamon roll

Transfer each section of roll to the baking pan, laying them down in the syrup on their sides. Cover and let it rise for 1 hour.cinnamon roll
Step 18
Preheat oven to 350° F (175° C) and bake for 25 to 30 minutes until light golden brown.
Step 19
Remove from oven and brush 1 Tbsp butter on top

Serve by flipping upside down onto a plate syrup side up
