Instructions
Step 1
Preheat the oven to 350°.
Step 2
Whisk together flour, baking powder, and salt into a bowl.
Step 3
Place the softened butter and 1 1/2 cups sugar in the bowl of an electric mixer fitted with a paddle attachment. Mix on medium speed until pale and fluffy, about 2-3 minutes.
Add the eggs and mix well.
Reduce the speed to low and gradually add the flour mixture until incorporated completely.
Step 4
Stir together the cinnamon and 3 tablespoons of sugar in a small bowl. Shape the dough into small balls and roll in cinnamon sugar. Place on a baking sheet lined with parchment paper, about 1 1/2 inches apart.
Step 5
Bake the cookies until the edges are golden, 12-15 minutes. Transfer to a wire rack and cool. Enjoy!
Step 6
Put in an airtight container or ziplock. They will last 10 days at room temperature.
