Step 1
Preheat cast iron pan in oven, 375°
Step 2
Quarter potatoes long ways then cut into 1/2 inch pieces. Dust with adobo, add olive oil, mix to cover and set aside.
Step 3
Season chicken.
Step 4
Place potatoes in the hot skillet in a single layer. Place chicken on top. Roast for 1 hour. Serve
