Sprouted Spelt Banana Muffins

Instructions

Step 1
Preheat oven to 350°F and line a muffin tin.
Step 2
Whisk together the first four ingredients in a bowl. In a different bowl, whisk together the sugar and wet ingredients until just combined. Fold wet mixture into the dry ingredients.
Step 3
Divide batter evenly into the muffin cups. Sprinkle with raw sugar, if desired. Bake the muffins, rotating the tin halfway through, 20 to 22 minutes. Place tine on a wire rack for 5 minutes, then transfer muffins to the rack and leave them until they are completely cool.
