This one is for the chocolate lovers. Decadently rich, fudgy brownies that have been layered with a not-too minty buttercream and topped with a dark chocolate ganache.

Ingredients

Brownie Base:
225gchocolate
good-quality, dark or semi-sweet
12 tablespoonsbutter
melted
250gsugar
2eggs
2 teaspoonsvanilla extract
¾ cupall-purpose flour
¼ cupcocoa powder
1 teaspoonsalt
Mint Frosting:
2 tablespoonsbutter
softened
2 ouncescream cheese
softened
1 tablespoonmilk
or cream
1 ½ cupspowdered sugar
⅛ teaspoonpeppermint extract
Chocolate Ganache:
Instructions
For the brownie base
Step 1
Preheat the oven to 350°F (180°C). Line an 8-inch (20 cm) square baking dish with parchment paper.
Step 2
Chop the chocolate into chunks. Melt half of the chocolate in the microwave in 20-second intervals, saving the other half for later.
Step 3
In a large bowl, mix the butter and sugar with an electric hand mixer, then beat in the eggs and vanilla for 1-2 minutes, until the mixture becomes fluffy and light in color.
Step 4
Whisk in the melted chocolate (make sure it's not too hot or else the eggs will cook), then sift in the flour, cocoa powder, and salt. Fold to incorporate the dry ingredients, being careful not to overmix as this will cause the brownies to be more cake-like in texture.
Step 5
Fold in the chocolate chunks, then transfer the batter to the prepared baking dish.
Step 6
Bake for 20-25 minutes, depending on how fudgy you like your brownies, then cool completely.
Mint Frosting
Step 7
Whisk softened cream cheese and butter until well creamed together.
Step 8
Whisk in milk & peppermint extract.
Step 9
Whisk in powdered sugar in 3rds, I just find it easier to incorporated in this way.
Step 10
Spread an even layer over the cooled brownies and place in the freezer to chill while you make the ganache
For the ganache
Step 11
Over a double boiler, melt the chocolate and butter together. Stirring frequently to ensure it doesn't burn
Step 12
Once melted, remove from heat.
Step 13
Once the mint frosting layer has cooled completely and become stiff, pour over chocolate ganache. Tilt the pan to shift ganache until all the brownies are covered
