Step 1
Melt the butter in a large pan and gently fry the onion until it has softened. Add all of the remaining sliced vegetables and cook gently for 3 – 4 minutes with the lid on. Add Stock, bay leaf, salt, pepper and nutmeg. Simmer for 20 minutes or until veg is tender. Allow to cool slightly and then remove the bay leaf. Sieve or liquidise. Add cream when serving.
