Courgette & Tomato Soup

Make this soup in late summer or early autumn, when courgettes and tomatoes are plentiful and cheap. It freezes well, so a big batch will keep you going through winter.

Instructions

Step 1
Melt the butter in a large pan, add the onions and courgettes, and cook for 5 minutes on a medium heat, stirring occasionally.
Step 2
Add the tomatoes and flour. Cook for a couple of minutes, stirring around to stop the flour from becoming lumpy. Add the turmeric and stock, then cover and simmer for 30 minutes.
Step 3
Purée in a blender, or with a stick blender, then push it through a sieve if you want a really smooth texture. Serve, or chill and then freeze for up to 2 months.
