For the dough

1 ⅔ cupall purpose flour

1 tspbaking soda

½ tspsalt

¼ tspinstant coffee powder
optional

⅓ cupcocoa powder
dutch processed

cocoa powder
plus 1/4 cup, dutch processed

¾ cupunsalted butter
room temperature

1 ¼ cuplight brown sugar

1whole egg
medium, room temperature

1egg yolk
room temperature

1 tspvanilla extract
For coating
Instructions
Step 1
Mix together the dry ingredients:
Flour, baking soda, salt, coffee powder, cocoa powder.
Step 2
Cream the room temperature butter until smooth.
Step 3
Combine the butter and the sugar together.
Step 4
Add the egg, the egg yolk and the vanilla extract. Mix until well combined.
Step 5
Add the dry ingredients to the wet ingredients. Mix until just combined.
Step 6
Chill the dough for 30 minutes.
Step 7
After chilling, for the dough into 1.5 inch balls.
Step 8
Coat them in the white sugar.
Step 9
Bake them at 180°C/350°F for 10-11 minutes
Step 10
