Step 1
Peel and dice 2-3 lbs potatoes into small bite size pieces, boil til tender. PARTIALLY drain potatoes, leave enough water that the potatoes are just covered. Return to medium heat.
Step 2
Finely chop or grate one small onion into pot, adding garlic as well. You can also use a food processor to make it almost into a purée. Roughly cube butter and add to pot, allowing it to melt fully before adding milk.
Step 3
Add milk and bring to simmer. Do NOT use skim milk for this recipe! Slowly add potato flakes to thicken while stirring so they don’t clump. Season with parsley, salt, and pepper to taste.
