This light refreshing appetizer is a family favorite that I grew up making & eating. I’m half Japanese and often see a version of this in Japanese restaurants & sushi places. Is so basic, so easy & always a summer favorite with a heavy main dish.

Instructions
Step 1
Partially peel cucumbers
Step 2
Then slice into very thin discs. I use a mandolin for easy perfect slices
Step 3
In large bowl combine cucumber, sugar, vinegar, salt, sesame seeds and toss to combine
Step 4
Transfer to glass container or cover bowl and chill for minimum 1 hour or overnight for flavors to develop
Step 5
Serve chilled as a side or appetizer with an umami salty meal to cut through & brighten your palate
