Banana Tea Loaf

The soft mottled brown-skinned bananas wich are rather overripe are ideal for this recipe

Instructions

Step 1
Grease a 900g/ 2lb loaf tin and line with greased greaseproof paper
Step 2
Beat the margarine until soft, then add the sugars and beat until light and fluffy
Step 3
Beat in the eggs one at a time
Step 4
Mash the bananas with the lemon rind and juice and beat into the mixture until smooth.
Step 5
Add the nuts, if used.
Step 6
Sift the flour, salt and soda together and fold into the mixture.
Step 7
Turn into the prepared tin and bake in a moderate oven (180C/350 F Gas Mark 4) for about 1 hour or until firm to the touch.
Step 8
Cool in the tin for 10 minutes, then tum out onto a wire rack to cool completely.
Step 9
Wrap in foil and store for 24 hours before serving in slices, either plain or buttered
