Ingredients

1onion
100gcheddar
20gsmoked Peri Peri seasoning
paprika, chilli
500gpork mince
4pita breads
100gbaby spinach
⅓ cupmayonnaise
2 Tbspolive oil
1 Tbspbalsamic vinegar
2 tspsugar
⅓ cuptomato paste
Instructions
Step 1
Preheat the oven to 220C. Line 2 oven trays with baking paper. Thinly slice the onion. Coarsely grate the cheese. Combine 1 tsp peri peri seasoning, 80ml cup) mayonnaise and 12 tbs water in a bowl, season with salt and pepper and stir to combine
Step 2
Heat 1 tbs olive oil in a large frypan over high heat. Cook the pork mince, breaking up the lumps with a spoon, for 3-4 mins until browned. Add 1 tbs peri peri seasoning*, season with salt and pepper and cook for 30 secs or until fragrant. Remove from the pan.
Step 3
Heat 1 tbs olive oil in the same pan over medium heat. Cook the onion, stirring, for 5 mins or until soft. Add 1 tbs balsamic vinegar and 2 tsp sugar and cook, stirring, for 1 min or until caramelised. Remove from the pan.
Step 4
Put the pitas on the lined trays and spread with 80ml (a cup) tomato paste. Top with half the spinach, the caramelised onion and peri peri pork. Scatter over the cheese and bake for 8-10 mins until the base is crisp and the cheese is melted.
Step 5
Slice the pizzas, top with the remaining spinach, drizzle with the peri peri mayonnaise and enjoy!
