Pizza - Sausage and baby broccoli.

Instructions

Step 1
In a bowl, put bot the "0" and the "Manitoba" flour along with the salt and mix them all together.

In a measuring cup put the yeast and sugar and with a tea spoon mix it rapidly until the yeast melts. It is going to take one or two minutes. Once is melted, add the water.

In the bowl where you have the flour, put the liquids, so the water and the yeast first and the olive oil second and mix it with a spoon or a spatula.

Once the liquids are absorbed, you can move the dough on a pastry board. The board needs to be wood or marble.

Oil your hand and knead the dough pushing it on the board vertically and folding it back to make it elastic. 5 minutes are enough and now you should have you elastic dough.

Place now the dough in a bowl and cover it with plastic wrap. Leave now the dough in a warm room for at least 8 hours. You can let the dough rest in your oven (do not switch on the oven).

After 8 hours, take a baking tray and oil it. Ease down the dough and roll it out so it can fit in the tray. Remember that also your hands needs to be oil so the dough does not stick to your fingers. Cover the tray with plastic wrap and let it rest for another 4 hours in your oven (do not switch on the oven).

Warm up the oven while preparing the other ingredients: Boil the baby broccoli in hot water for five minutes and in the meantime war up a frying pan with a bit of oil. Once the oil is well warmed, add the crumbled sausage (i used fresh Italian sausage) and cook if for 5 minutes before to add the baby broccoli and roast for another 5 minutes. Season the ingredients as you wish, I only add salt and pepper. Remove the pan from the stove and keep it warm.

Now that the oven is at the correct temperature is time to get ready with the final steps. Start with a little bit of olive oil, then ease down the tomato sauce and cover the entire surface of the pizza. Add oregano and salt at your own taste. Put the tray in the oven.

After 10 minutes, remove the tray from the oven and quickly ease down the mozzarella first and all the other ingredients next. Put the pizza back in the oven for another 10 minutes.
