Ingredients
8 servings
Marinade
⅓ cupfresh basil leaves
chopped
2 Tbspfreshly squeezed lemon juice
1 Tbspolive oil
1 Tbspbutter
melted
1 Tbspdijon mustard
1 Tbspliquid honey
2 tspminced garlic
2 tspgingerroot
grated
2 tsplemon zest
grated
1 tspbalsamic vinegar
½ tspsalt
¼ tspfreshly ground black pepper
Shrimp
Instructions
Marinade the Shrimp
Step 1
Combine all marinade ingredients in a small bowl.
Step 2
Place shrimp in a large, heavy duty resealable plastic bag.
Step 3
Pour marinade over shrimp and seal bag.
Step 4
Turn bag several times to coat shrimp with marinade.
Step 5
Marinate in fridge for 1 hour.
Skewer & Grill
Step 6
Preheat grill to high setting.
Step 7
Thread shrimp onto skewers ( 5 or 6 per skewer, depending on size of shrimp).
Step 8
Discard marinade.
Step 9
Spray grill rack with cooking spray or brush lightly with oil.
Step 10
Grill shrimp for about 2 minutes per side, just until shrimp turns pink & no gray remains.
Be careful not to overcook shrimp or they will be rubbery.
