For the cupcakes:
2 tspearl grey loose tea
100mlmilk
hot
1egg
125gsugar
135gself-raising flour
+1tbsp
5gbaking powder
55gsunflower oil
200gblueberries
1lemon
zest only

Instructions
Step 1
Bring milk to a boil. Add earl grey tea to the cup and pour hot milk over it. Leave to infuse for 1 hour.

Preheat oven to 180C
Step 3
In a large bowl whisk together egg, sugar, infused milk and sunflower oil. Stiff in flour and baking powder and mix well until combined.

Dust blueberries with 1tbsp flour and add them to the batter, then add lemon zest and mix well.
Step 5
Fill prepared heavy-duty cupcake cases about 2/3 full with mixture and bake at 180C for 25 minutes. Let them cool completely. Please note, if you use regular cupcake liners then place them in a muffin tin.

For the frosting, combine all ingredients in a large bowl. Beat for a few minutes until firm and spoon it into the piping bag with an āopen starā nozzle( or your favourite one)
