Instructions

Step 1
Bring milk to a boil. Add earl grey tea to the cup and pour hot milk over it. Leave to infuse for 1 hour.

Preheat oven to 180C
Step 3
In a large bowl whisk together egg, sugar, infused milk and sunflower oil. Stiff in flour and baking powder and mix well until combined.

Step 4
Dust blueberries with 1tbsp flour and add them to the batter, then add lemon zest and mix well.
Step 5
Fill prepared heavy-duty cupcake cases about 2/3 full with mixture and bake at 180C for 25 minutes. Let them cool completely. Please note, if you use regular cupcake liners then place them in a muffin tin.

For the frosting, combine all ingredients in a large bowl. Beat for a few minutes until firm and spoon it into the piping bag with an ā€œopen starā€ nozzle( or your favourite one)

Frost the cupcakes as usual.

Decorate with blueberries and mint leaves and enjoy!
