Step 1
Preheat the oven to 350F/180C/ gas 4. Place the chopped apples and rhubarb in an ovenproof dish. Scatter over half of the sugar. Pour the vanilla extract over and roast in the oven for 10 minutes.

Mix the flour and butter together in a large mixing bowl, by rubbing together between your fingertips. Combine until you have a breadcrumb texture.
Step 3
Add the remaining sugar and chopped walnuts or oats and mix thoroughly. Sprinkle this mixture over the fruit. Cook for 35-40 minutes, until the top is golden brown.
Step 4
Serve warm with cream or vanilla ice cream.
