These Cowboy Cookies are so named because this recipe originated in Texas. They're a combination of oatmeal cookies and chocolate chip cookies in one package

Instructions

Step 1
Preheat oven to 350 degrees and line three baking sheets with parchment paper
Step 2
In a small bowl, mix together flour, baking powder, baking soda, cinnamon, and salt.
Step 3
Add butter to a large bowl and beat with a mixer at medium speed until smooth and creamy. Beat in sugars until combined. Add eggs, one at a time, and vanilla extract and beat until smooth
Step 4
Add the flour mixture and mix until fully combined. Add chocolate chips, oats, coconut, and pecans and mix until fully combined.
Step 5
Using a greased 1 1/2 tablespoon cookie scoop, place cookies 2" apart on prepared baking sheets
Step 6
Bake for 15-17 minutes until edges are lightly browned. Allow cookies to cool for 5 minutes before transferring to wire racks to cool further. Store in an airtight container at room temperature for up to 3 days.
