2lamb shanks
cooked to packet instructions
1 handfulraisins
soaked in hot water
1 bunchcoriander leaves
chopped
2 cupsbasmati rice
cooked
2 cupscauliflower
grated
2brown onions
sliced
5 clovesgarlic
chopped
olive oil
8green cardamom
1cinnamon stick
4black cardamom
optional
1 Tbspcumin seeds
salt
1chicken stock cube
1carrot
grated
2 Tbspgaram masala
Instructions
Step 1
Cook the lamb shanks to the packet instructions
Step 2
Heat 4 tbsp of olive oil in a skillet
Step 3
When hot, add the whole spices so they splutter
Step 4
After 30s add the sliced onions and stir to coat in the oil and spices
Step 5
Turn the heat to medium and slowly fry the onions until they develop a deep golden brown colour
Step 6
Add the chopped garlic and cook for a few more minutes
Step 7
Add the garam masala and the grated cauliflower and cook for five minutes
Step 8
Add the stock cube with a little water or the juices from the lamb shanks and cook for a further few minutes
Step 9
Fold in the basmati rice and grated carrots
Step 10
Season with salt
Step 11
Empty on to a platter, place the shanks on top and decorate with the raisins and coriander
