Lamb Steak
This leg of lamb was cheaper than beef rib-eye at Whole Foods. I used a cast-iron skillet and cooked for 2-3 minutes on both sides, cooking the edge of the steak until brown. It was juicy and flavorful! Check my Tik Tok (@kuritomo), and my Instagram (kuritomo_cooking)!

Instructions
Step 1
Heat a well-seasoned large cast iron skillet over high heat until smoking, about 5 minutes.
Step 2
Season the steaks with salt and black pepper.
Step 3
Add garlic and steak to the hot skillet. Cook until a brown crust forms on the bottom, about 2 minutes. Add thyme.
Step 4
Flip the steaks and cook them for 3 more minutes on the second side.
Step 5
Finish by cooking the strips of fat on the edges of the steaks, about 30 seconds for each edge.
Step 6
Transfer the steaks to plates, and rest for 8 minutes before serving.
