Instructions
Step 1
Sift flour, baking powder, and salt together and sweet aside.
Step 2
Mix sugar, butter, eggs, and almond extract together at high speed until light and fluffy.
Step 3
Add flour mixture, in roughly 4 batches, to the sugar/butter mix. Might need to turn mixer off before adding batches and start on slow to minimize flour spraying out.
Step 4
Turn dough out onto large sheet of plastic wrap. Fold plastic wrap over each side, squeezing dough and firming a log.
Step 5
Refrigerate at least 2 hours, over night is fine. Also can be frozen for use later.
Step 6
Pretty oven to 400 degrees.
Step 7
Get some of the dough out of the refrigerator. Leave what you are not ready to bake in the refrigerator.
Step 8
Till out on floured surface to about 1/8 inch thick. Can also use wax paper below and above dough to roll out.
Step 9
Cut out with floured cookie cutters.
Step 10
Place on cookie sheet with Silpat or baking stone. Place with some room between them.
Step 11
Bake 8-10 minutes or just until lightly browned around the edges.
Step 12
Cool completely before frosting.
