Alternative to whipped cream, only works if everything is very cold and coconut cream has high fat content. Carefully spoon the coconut cream out of can, trying not to mix as you place in chilled bowl.

Instructions
Step 1
Place a medium bowl and the mixer beaters in the refrigerator or freezer for several hour, or until very cold.
Step 2
Into the chilled bowl, spoon the chilled coconut cream. Add the maple syrup and vanilla. Beat with the chilled beaters on high speed until soft peaks form.
Step 3
Refrigerate, covered, until ready to use. It will only hold its peaks for a few days.
