Tropical Tiramisu

I love this tropical twist on the classic tiramisu with layers of silky coconut cream, lady fingers soaked in mango juice, and fresh mangos. Simple to make and super refreshing on a hot summer day!

Instructions

Step 1
Cream your mascrapone, sugar, and coconut extract until mixture is smooth. Gradually add the cold heavy cream until it’s incorporated, and increase speed to whip until stiff peaks are formed.
Step 2
Prepare a bowl of mango juice for dipping, and cut your mangos into cubes.
Step 3
Begin to assemble: coat your lady fingers in a bowl of mango juice and place in a 7x11 pan. Once the first layer of lady fingers is done, spread half of the cream mixture over. Spread an even layer of mango cubes over the cream. Continue with another another layer of mango-juice soaked lady fingers, and spread the remaining cream mixture. Top with coconut shavings and more fresh mangos!
Step 4
Allow the tropical tiramisu to chill in the fridge for at least 4 hours before cutting into it. Enjoy!
