Instructions
Step 1
Set butter out to soften. Preheat oven to 350°F; line baking sheet(s) with parchment paper.
Step 2
Finely chop almonds and spread on prepared baking sheet in single layer; bake 7-9 minutes until toasted.
Step 3
Remove from oven and set aside to cool.
Step 4
Add butter and sugar to large bowl; beat with electric mixer, until pale yellow and fluffy.
Step 5
Beat in both extracts, then stir in flour, toasted almonds, and salt. Continue beating until dough forms.
Step 6
Wrap dough in plastic and press into a 1-inch disc.
Step 7
Chill 30 minutes.
Step 8
Roll dough on lightly floured work surface into 1/2-inch-thick round.
Step 9
Cut out cookies using a 2-inch cookie cutter and arrange on prepared baking sheets.
Step 10
Bake 12-15 minutes until edges are golden.
Step 11
Remove from oven and set aside to cool.
