175gwhole milk

Instructions
Blooming the yeast
Step 1
Heat up the milk to around 98°F/36.6°C
Then mix in the yeast and let it sit for 10 minutes.
Mixing the dough
Step 2
Add the flour, sugar, salt with the bloomed milk/yeast mixture in the stand mixer and mix then add the eggs one at a time and let it mix until everything is well incorporated, then add the butter and let it mix until the dough comes back together and it looks nice and smooth (gluten development)
Fermentation
Step 3
Form the dough into a ball and put it into a bowl and let it rest for 15 minutes
Step 4
after 15 minutes is done perform a set of stretch and fold and let it rest again for 45 minutes .
Step 5
after 45 minutes, very lightly flour your work surface and dump your dough on to the surface and perform another series of stretch and fold until the dough has been shaped into a ball and then roll it over so the seam side is facing down, the create the ball again using your fingers and making some surface tension. Transfer into the bowl and refrigerate it overnight
Preparing the cinnamon rolls
Step 6
Make the cinnamon sugar filling by mixing the cinnamon and sugar.
Step 7
Flour your work surface and dump your dough onto the surface. lightly flour the rolling pin and start rolling the dough into a rectangle.
Step 8
Spread the butter onto the dough and then sprinkle all of the cinnamon sugar filling on the dough
Step 9
Tightly roll the dough and seal the bottom, then cut it into 1.5-inch pieces and place them on a baking sheet placed about 1 inch apart and cover it with a loose plastic wrap. put them in the oven with the lights turned on and let it sit for about 2 hours or nearly doubles in size

Preheat your oven to 350°F/180.°C
Step 11
Bake them at 350°F/180.°C for 12 minutes and then rotate the tray and cook for another 12 minutes
Step 12
While they're baking make your icing and after they're done pour your icing onto the cinnamon rolls
