peel and grate the zucchinis, remove extra water if it's too moist

put grated zucchinis in a bowl, add yoghurt, cut parsley leaves, eggs and salt. whisk thoroughly

add flour step by step mixing well after each addition. watch your dough become as thick as heavy cream – you may need a bit less or more flour than indicated in the recipe

preheat the waffle maker and spread its panels with a drop of olive oil using a culinary brush. make it once, before the first waffle. put the dough, about 2 tablespoons per waffle. close the waffle maker and bake each waffle for about 3-5 minutes. repeat with the rest of the dough
