Vietnamese Fish Sauce Wings - Cánh Gà Chiên Nước Mắm

Instructions

Step 1
• In a large pan on low heat, heat up the fish sauce, sugar and thai chilis
Step 2
•Turn off heat immediately once sugar has melted
Step 3
Do not let the sauce simmer too long as it will become too salty. Set sauce aside for later

For the wings

Step 4
Marinate wings overnight or at least an hour with chopped Shallots & Garlic
Step 5
• Double fry wings in small batches
Step 6
• Scoop out the fried shallots and garlic from the fryer as soon as it turns a golden brown onto a plate lined with paper towel to remove excess oil. Set aside to sprinkle on wings later
Step 7
• Once wings are crispy and golden brown from the 2nd fry, immediately remove and toss in with the fish sauce mix for about 30-45 seconds
Step 8
•Add to serving plate
Step 9
• Sprinkle the fried garlic and shallots onto the wings
Step 10
Enjoy with rice!
