This is a healthier version, so easy to make and tastes so incredibly similar. You need to try it!!

Instructions

Step 1
Prep the garlic sauce first by combing all of the ingredients listed, this will be divided by into two portions later.
Step 2
Slice the chicken breast into bite size pieces.
Step 3
Then marinate the chicken in the seasoning by combining the chicken chunks, dried seasonings and olive oil in a bowl and mixing. If you have time cover and place in the fridge for 30 mins, otherwise you can use straight away.
Step 4
To make the rice, heat the olive oil in a sauce pan and then squeeze in the tomato puree followed by adding in all of the seasonings.
Step 5
Stir and fry that round for a few mins on medium heat which should bring the mixture together into a paste, before pouring in your thoroughly rinsed basmati rice.
Step 6
Stir that into the seasoning mixture to coat all of rice and fry for a few mins before pouring in all of the water.
Step 7
Stir and then bring to a simmer before throwing in the stock cube and stirring in. Then reduce the heat to low / medium and continue to simmer without a lid for exactly 8 mins.
Step 8
After 8 mins the rice should have soaked up all of the water. Use a spoon to stir the rice mixture together and then remove from the heat and place a lid on the sauce pan.
Step 9
Leave for 5 mins to continue to steam before serving.
Step 10
Whilst the rice is cooking, place a frying pan on medium high heat and place in all of your seasoned chicken. Let sit for a few mins before stirring to get a slight char.
Step 11
Then stir and fry for a further 4 mins until fully cooked through and then squeeze over the half lemon, add in the splash of water and squirt in the sriracha and stir through. The chicken should be nicely charred on the outside and be coated in a slight sauce.
Step 12
Take the lid of the sauce pan and fluff the rice and now serve into two equal portions, followed by the chicken bites and then drizzling over the garlic sauce over each portion.
