Instructions
Step 1
On an un-oiled pan over medium high heat, add your diced zucchini and mushroom. Let it cook for 3 minutes, stirring occasionally. This will let it pull the moisture out.
Step 2
Add a tsp of olive oil and add in your diced onion. Let it cook for another 2 minutes, stirring occasionally
Step 3
Switch to medium low heat and add your eggs and feta. Stir often until cooked to your likeness (around 3 more minutes). Salt and pepper to taste
Step 4
Serve with guac, hot sauce, toast, or whatever else you’re craving!
