Step 1
1. Preheat the pan with olive oil.

2. Place the chopped peppers and spinach in the pan.

3. In a separate bowl mix the eggs.

4. Add the egg mixture and stir to combine and distribute the ingredients in the pan.

5. Top with the cilantro.

6. Place a plate or lid on top of the pan. Let it cook for 20-25 minutes until puffed and golden on top. Remove from the stove and set aside to cool for 5 minutes.
