Instructions
Step 1
Step 1 Heat the oil in a saucepan over medium heat, add the sausages and fry for 7-8 minutes until golden brown all over.

Remove from the pan, cut into thick slices and set aside.

Step 2 Add the onion and carrot to the pan, fry for 5 minutes until soft then crumble in the stock cube.

Add the lentils then pour in just enough boiling water to cover.

Bring to the boil then simmer gently for 5 minutes.

Step 3 Return the sausages to the pan, stir to combine then remove from the heat.

Stir in the mustard, vegan parmesan and parsley then serve.
