Southwestern Steak with Corn and Chiles

Ingredients
4 servings
2 tablespoonsroasted salted pumpkin seeds
hulled, pepitas, finely chopped
2 teaspoonsSouthwest seasoning blend
½ teaspoonpepper
1 lbbeef sirloin steak
boneless, 1 inch thick
4 teaspoonsextra virgin olive oil
4 earsfresh sweet corn
husks removed, cut in half crosswise, or 8 frozen small corn-on-the-cob
2poblano chiles
large, cut in half lengthwise, stems and seeds removed
1onion
medium, cut into 8 wedges
¼ cuproasted salted pumpkin seeds
hulled, pepitas
Instructions
Step 1
In small bowl, mix 2 tablespoons chopped pumpkin seeds, 1 teaspoon of the seasoning blend and the pepper.
Step 2
Press mixture into all sides of beef; let stand room temperature 15 minutes.
Step 3
Meanwhile, set oven control to broil. Line 15x10x1-inch pan with heavy duty foil; coat foil with oil.
Step 4
In same small bowl, mix oil and remaining 1 teaspoon seasoning blend.
Step 5
Place corn, chiles and onion in pan.
Step 6
Drizzle oil mixture ove vegetables; toss until evenly coated.
Step 7
Push vegetables together in single layer sides of pan, leaving room in center for beef.
Step 8
Broil 4 to 6 inches from heat 10 to 15 minutes for medium doneness (160°F).
Step 9

Slice beef; place on serving plate.
Step 11
Add vegetables to plate; sprinkle with 1/4 cup pumpkin seeds.
