Step 1
Cut squash in half and spoon seeds out. Put in pans with water in the pan in the squash. Put pans in oven at 350 f for 1 hour. Dice pepper and onion. Sautee pepper and onion in pan with coconut oil. Add rice and beans to pepper and onion. Add salt. Cook until soft and flavor has mixed well. When squash is ready, pull out of oven and pour out water. Put squash on serving platter. Fill squash with the cooked rice mix and pour some excess rice mix over the squash.
