Instructions

Step 1
1. Heat up some extra virgin olive oil in a non-stick pan and add the diced onion and garlic optionally with some salt.
Step 2
2. When they have become golden, add in the cubed zucchini, bell pepper and carrot.
Step 3
3. Allow the vegetables to soften for a few minutes, then add in the cous cous. Mix everything and cover with water and add the bouillon
Step 4
4. Leave it to simmer for around 10-15 minutes or until the cous cous is cooked through, at this point turn off the heat and add in the chickpeas and the tomato paste.
Step 5
5. Mix everything together and finally add some chopped parsley and the turmeric, ground cumin and some fennel seeds.
