Instructions
Step 1
To prepare mango, use a sharp parting knife to slice it in half lengthwise, around the large stone.
Step 2
Use the slice mark as a starting place to peel away the skin.
Step 3
Then slice off strips of man flesh, working around the stone.
Step 4
Slice the strips into bite-size pieces and place them in a medium bowl.
(The whole process is easier if you do it over the sink.)
Step 5
Cut tomatoes into chinks and add them to mango slices, then add scallions and toss well.
Step 6
In a small bowl, whisk together lemon juice and pulp, oil, and mustard.
Step 7
Pour over mango mixture and toss well.
Step 8
Serve at room temperature or chilled on salad plates.
