This one isn’t pretty but it’s tasty and really simple. All measurements are based on ingredients I had on hand. So if you want more or less of either feel free.

Instructions
Step 1
Add 1 tbls olive oil to skillet over medium heat. While you prep the ingredients.
Step 2
Chop eggplant to 1/4 inch cubes. Seed then slice sweet mini peppers into strips.
Step 3
Once skillet is up to heat add both eggplant and sweet mini peppers into skillet. Then drizzle remaining olive oil over them and mix the. Stir occasionally until done. 8-10 minutes.
Step 4
Pour into serving dish. Serves 4-6.
