Instructions
Step 1
Grease 140 cm diameter tin or pie plate.
Step 2
Mix the biscuit crumbs and margerine.
Step 3
Press the crumb mixture onto the bottom of the pie plate.
Step 4
Soak geletine in in the water.
Step 5
Mix caster suger, egg yolk, 40 ml of the cream and salt. Heat over low heat slowly while stirring until it thickens.
Step 6
Dissolve the geletine over hot water.
Step 7
Add the geletine to the hot egg mixture and mix until it is dissolved.
Step 8
Add the vanilla essence.
Step 9
Gradually add the warm mixture to the cold cream cheese. Allow the mixture to set partly in the fridge.
Step 10
Fold the rest of the whipped cream.
Step 11
Whip egg into soft peak stage. Fold into cream mixture.
Step 12
Pour into prepared dish and place in fridge tk set completely.
Step 13
Cook fruit with a pinch of suger until just soft. Make into a puree and serve with cheesecake.
