Easy Oven Pot Roast

We found this recipe in the early 1970s and have been making it ever since. Over the years, we've tweaked it a little to add more vegetables and garlic. Other than that, we haven't changed a thing. The original recipe is credited to Mrs. Vincent Indelicato, Sam-Jasper Winery, Manteca, CA.

Instructions
Step 1
1. Place chuck roast in a dutch oven or small roaster.
Step 2
2. Blend soup, wine, and garlic. Pour over meat.
Step 3
3. Add onion, parsley, salt, and pepper.
Step 4
4. Cover and bake in moderate (325°) oven for 4 hours.
Step 5
5. Remove from oven, add potatoes, carrots, and mushrooms.
Step 6
6. Replace in oven and bake for 1 hour.
Step 7
Serve with garlic bread, tossed green salad, and fruit.
