Instructions

Step 1
Prepare pie crust according to instructions.
Step 2
Preheat oven to 350°F

Meringue

Step 3
Whip egg whites until foamy.
Step 4
Add sugar gradually, whip until stiff peaks.

Lemon Filling

Step 5
In a medium saucepan, whisk sugar, flour, cornstarch, & salt.

Cook over med-high heat, stirring frequently, until boiling.

Stir in butter.
Step 8
Place egg yolks in a small bowl & gradually whisk in 1/2 cup hot sugar mixture.
Step 9
Bring to a boil & continue to cook while stirring until thick.
Step 10
Remove from heat.

Constructing the Pie

Step 11
Pour lemon filling into pie crust. Spread meringue over the still-warm filling.
Step 12
Bake pie for 10 minutes or until the meringue is golden brown.
