Poacher peppers until they are tender. Or you can use them raw. While the peppers are poaching, brown the sausage then drain on a towel. Make the gravy according to the package directions while you scramble your eggs. Layer all the items inside the bell pepper then top with cheese. If desired, bake in the oven to toast the cheese.
