Easy Breakfast Casserole Muffins

Could use more taste. Recommend adding jalapeños for spice

Great recipe, super easy and tasty. It's like a secret weapon when you don't want to cook and don't have much at home. We ate it for dinner, and it was liked by a 6 and a 2 year old. Mine was a bit salty, so I'd put a bit less than suggested next time. I used mustard sauce instead of ground mustard.

This was really easy to make and delicious!

Used kraft fat free cheddar almond milk and center cut bacon to make! Delicious for meal prep

Cooled and ready for on the go breaky in the morning. Hubby couldn't help but sneak one & was delighted 😆 I had some Brioche slices leftover so I used those in the bases & did some mini ones using up crusts & bits. 😋

I used bacon instead of ham because that's what I had on hand. I cut the ground mustard in half and added a little salt to taste. Very easy and delicious little breakfast recipe.

The nice thing about this is you can pretty much add whatever you want. I added spinach and tomatoes to mine.
